  • Butter Chicken With Cauliflower Rice

Ingredients:

    • ¼ cup water
    • ½ lime juiced
    • 1 cup full fat organic coconut milk
    • 1 head cauliflower
    • 1 tablespoon curry powder
    • 1 teaspoon sea salt
    • 1 tablespoon chili powder
    • 2 tablespoons extra virgin olive oil
    • 2 chicken breast
    • 2 cloves minced garlic
    • 2 tablespoons grated ginger
    • 2 diced yellow onion
    • 2 teaspoons paprika
    • 2 teaspoons garam masala
    • 4 tablespoons tomato paste

Procedure:

    • Chop your chicken into cubes then set aside.
    • Heat olive oil over medium heat to sauté onion, garlic, and ginger.
    • Add in paprika, tomato paste, curry, garam masala, sea salt, then chili powder.  Cook mixture for 2 minutes.
    • Drop chicken to the mix and stir well for 7 minutes.  Pour water and stir again.
    • Add in coconut milk.  Let it simmer for 5 minutes.
    • Put cauliflower into food processor and process until texture becomes similar to that of rice.  Squeeze lime juice to rice.  Transfer rice to a different bowl.
    • Place cooked chicken on top of the cauliflower rice.  Serve.

Notes:

    • Substitute chicken breast with lentils or beans to make it a vegan recipe.
    • Use greek yogurt if you don’t have coconut milk.  Use brown rice instead if you are missing cauliflower rice.
    • Add sweet potatoes, baby spinach, and kale if you want more vegetables in your recipe.

 

  • Vegetable Spaghetti Bowl

Ingredients:

    • Fresh cherry tomatoes cut in half
    • Roughly chopped fresh parsley
    • ½ chopped red capsicum
    • ½ chopped yellow capsicum
    • 1 cup broccoli florets
    • 1 tablespoon coconut oil
    • 1 peeled and chopped purple onion
    • 1 clove peeled and crushed garlic
    • 2 chopped large celery stalks
    • 3 chopped spring onion stalks
    • 340 grams Barilla Gluten Free Spaghetti
    • 400 grams can Barilla Arrabbiata Pasta Sauce

Procedure:

    • Fill pot with water halfway.  Bring it to a boil.  Add in pasta and stir.  Cook for 9 minutes.
    • Drain and set aside the pasta.
    • Heat coconut oil in a frying pan and set it to high heat.  Sauté onion and garlic until they become transparent.
    • Add celery, spring onion, capsicum, and broccoli.  Cook for 10 minutes on medium high heat.
    • Mix in pasta sauce and cook for 2 minutes.  Stir in parsley and tomatoes.
    • Mix together pasta and cooked pasta sauce for about 2 minutes.
    • Sprinkle parsley and add tomatoes.  Serve and enjoy!

Unfortunately, there is too little lunch options that you can choose from to enjoy a hearty lunch.  For this reason, the celiac who have not yet adjusted hate them.

Do not worry.  We have ideas that you can use to maintain that healthy yet energy boosting lunch that you so need to get through the rest of the day.  Here they are:

 

1. Spiced Peanut Butter, Banana, and Honey sandwich

Ingredients:

Spiced Peanut Butter

  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon ground cinnamon
  • 1 cup unsalted peanut butter
  • 1 teaspoon salt
  • 1 ¾ teaspoons honey

Peanut Butter, Banana, and Honey Sandwich

  • ½ teaspoon ground cinnamon
  • 1 teaspoon sugar
  • 1 cup spiced peanut butter
  • 2 ounces coconut oil
  • 2 tablespoons honey
  • 6 sliced bananas
  • 12 sli8ces gluten free bread

Procedure:

Spiced Peanut Butter:

  1. Mix all of the ingredients in a bowl. Whisk thoroughly.
  2. Store the mixture in an airtight container. Keep it in the refrigerator for 8 weeks.

 

Peanut Butter, Banana, and Honey Sandwich

  1. Place two slices of bread on top of a cutting board.
  2. Smear peanut butter on each of the slices of bread. Set aside one slice.
  3. Place sliced bananas on the slice of bread. Pour honey on the bread and place the other slice of bread on top of it.
  4. Brush coconut oil on top and bottom sides of the sandwich.
  5. Cook sandwich on your stove for about 4 minutes on each side. Make sure that you set stove at medium heat.  Alternatively, you can place sandwich in an electric sandwich maker for 3 ½ minutes to cook sandwich.
  6. Mix sugar and cinnamon in a separate bowl.
  7. Season sandwich with the newly created mixture.
  8. Cut the sandwich while it is still hot.

Note: those with peanut allergy can substitute with sunflower seed butter.  Alternately, you can use agave nectar instead of honey for a certified vegan lunch.

 

 2. Prosciutto-Wrapped Basil Shrimp

Ingredients:

  • Cooking spray
  • 1/8 teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon lemon zest
  • ½ teaspoon kosher salt
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon extra virgin olive oil
  • 8 lemon wedges
  • 10 thinly sliced prosciutto
  • 20 thawed large frozen peeled deveined shrimp

Procedure:

  1. Preheat broiler.
  2. Mix basil, black pepper, olive oil, salt, shrimp, red pepper flakes, and zest in a bowl. Set aside.
  3. Choose a wide area to lay out the prosciutto. Cut the slices in half lengthwise to get 20 pieces of prosciutto.
  4. Wrap each shrimp with prosciutto but make sure to leave out the tail. Skewer the shrimp.
  5. Repeat steps 1 to 4. The ingredients will make 4 skewers with 5 shrimps each.
  6. Lightly coat the shrimps with cooking spray and broil for 2 minutes on each side.
  7. Add lemon wedges to your plate and serve while the shrimps are still hot.

1. Choco cupcakes

Ingredients:

  • 1/8 teaspoon salt
  • ½ cup almond meal
  • ½ cup unsweetened cocoa powder
  • ½ cup unsweetened applesauce
  • ¾ teaspoon baking powder
  • 1 teaspoon espresso powder
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 packets of stevia
  • 5 teaspoons of melted coconut oil

Frosting

  • ¼ cup unsweetened cocoa powder
  • 2 packets of stevia
  • 3 tablespoons melted coconut oil

Procedure:

  1. Preheat the oven to 375 F.
  2. Place 6 paper cups on a muffin pan.
  3. Mix together almond flour, baking powder, cocoa powder, espresso powder, salt, and stevia. Let it sit.
  4. Combine applesauce, coconut oil, eggs, and vanilla extract in a separate bowl.
  5. Add the mixture of wet ingredients to the dry ingredients. Stir and mix well.
  6. Pour the mixture into the paper cups. Do not fill the cups though.  ¾ of the cup will do.
  7. Bake for 20 minutes. If you want, you can use a tester.  If it comes out clean, your cupcake is ready.
  8. Let the cupcakes cool for about 5 minutes before transferring them to a cooling rack.
  9. Combine the ingredients for frosting and smear them on the cupcakes.

 

2. Peanut butter cups

Ingredients:

Bottoms

  • ¼ cup organic melted coconut oil
  • ¼ organic maple syrup
  • 1 cup organic peanut butter

Toppings

  • ¼ cup melted organic coconut oil
  • ¼ cup organic raw cacao powder
  • ¼ cup organic maple syrup

Procedure:

  1. Prepare the peanut butter bottoms. Mix the coconut oil, maple syrup, and coconut oil in a bowl.  Mix well.
  2. Drop a spoon of the mixture at a time to the standard sized muffin cups. Make sure that the cups are not filled to the brim.  About 2/3 of the cup is enough.
  3. Freeze the cups for approximately 15 minutes or until they are solidified.
  4. Mix together the coconut oil, raw cacao powder, and maple syrup in a different bowl.
  5. Drop a spoon of the mixture on top of the frozen peanut butter cups.
  6. Freeze for about 30 minutes.
  7. Let the cups stay in the freezer until you serve them as they will melt.

Rashes or skin disorder may be the last thing on your mind whenever you apply your makeup because you are laser-focused on prettifying yourself.  But what if you have Celiac disease or is sensitive to gluten?

You need to be wary of the products that you are using.  Below are just two tips to buy or find gluten free makeup.

  1. Find GF – no, I am not referring to girlfriend.  GF means gluten free and you need to look for signs or logos in the packaging that blatantly says “GF”.  There are also labels that spell out “gluten free” to make sure that those with gluten intolerance can safely use the makeup.  Otherwise, scram and look for legit gluten free makeup.
  2. Read, read, and read – always read and check the label because you will never find gluten written in the ingredients list.  Or have you ever read a makeup label that says it has wheat, barley, or rye in it?  Nope!

They use scientific names that sometimes they themselves don’t understand.  How much more for us commoners, right?  Here is a list of scientific words or ingredients that will help you know that what you are looking at is NOT a gluten free makeup:

  • Avena Sativa
  • Cyclodextrin
  • Dextrin, Dextrin Palmitate
  • Hordeum Vulgare
  • Hydrolyzed malt extract, Hydrolyzed oat flour, hydrolyzed vegetable protein, hydrolyzed wheat flour, hydrolyzed wheat gluten, hydrolyzed wheat protein, hydrolyzed wheat protein/PVP crosspolymer, hydrolyzed wheat starch
  • Secale cereal seed flour
  • Triticum Vulgare
  • Vitamin E (they are sometimes obtained from wheat)
  • Wheat amino acids, wheat germ glycerides, wheat germamidopropalkonium chloride, wheat protein, wheatermamidopropyl ethyldimonium ethosulfate
  • Yeast extract
